Almond Milk Chai Latte

As the weather cools down, I love to add in more warm drinks, especially in the morning - this almond milk chai latte is a great source of antioxidants and a fun way to switch things up instead of your standard morning coffee!

This recipe makes 2 servings.

Ingredients

  • 2 cups unsweetened vanilla almond milk (or other milk alternative)

  • 2 black tea bags

  • ¾ tsp ground cinnamon

  • ¼ tsp ground ginger

  • ⅛ tsp ground cloves

  • 4-8 tsp honey (to taste)

Instructions

  1. Heat up the almond milk in a saucepan over medium-high heat, until it begins to bubble over the edges of the pan.

  2. Turn off the heat and add tea bags to the pot of hot milk. Wait 3-5 minutes for the tea to steep; then, remove the bags.

  3. Add in cinnamon, ginger, cloves, and honey. Turn the heat to medium; whisk to combine, stirring regularly, until the mixture is hot.

  4. Adjust any seasoning to your taste and serve immediately.

You can store leftovers in an airtight container for up to 4 days in the fridge - serve chilled over ice or reheat on the stove!

I know you won’t believe this, so sit down for this one. I DON’T DRINK COFFEE. Not only that, but I’ve never ever tried it before! OK, caught your breathe of finished yelling “what? no way!” Lets move on then :)

I discovered 2.5 yrs ago that I have Raynaud’s Syndrome. In case you don’t know what that is, it’s inflammation of nerves or blood vessels triggered by stress or cold temperatures. The tips of the fingers & toes turn purple and can turn numb. Because of this, drinking warm beverages helps prevent me from getting cold as easily, but I haven’t been able to find a warm beverage I like.

Back in January my husband chose to limit himself to 7 alcoholic drinks per week so he started enjoying tea in lei of that. Pretty healthy switch if you ask me, and he’s leaned out too. (why is that so much easier for men to do? I digress.) I’ve been watching him and curious, but I’ve never had an acquired taste for tea. At the suggestion of friends, I walked into T2 (they’re global, but not in USA now). I guess if you appear clueless like I was, they take you under their wing and teach you everything! YAY for me! I bought a sampler box and we had fun tasting all 20 options and making Y or N. I found I gravitate towards green teas more than black, but herbal teas mostly. Here’s my cart picture of the 4 I loved most. Have you tried any of these? What are your favorites?

Here’s the new gadget I got as a surprise from my hubby. Can you tell he’s exited about my new tea drinking habit? You put the dry tea leaves in, add hot water, let it sit 3-5 minutes and then rest it on your coffee mug / tea cup while it fills it up with yummy goodness!
