Hot Honey Coconut Protein Bites

Ingredients
½ cup clean Peanut Butter (no added oils or sugars)

¼ cup Hot Honey

½ cup Shredded Coconut

1 Scoop Vanilla Life Shake

Roll in shredded coconut for a tasty twist on protein. This is great for parties, snacks or dessert. Sneak protein anywhere you can! All my clients come to me lacking protein, but overly consuming carbs. Carbs aren’t the enemy, but protein isn’t either!

Healthy Carrot Cake Oatmeal Cookies

Yields: 14 cookies

These cookies taste just like their namesake! Lots of sweet carrots coupled with the hearty oats and cinnamon makes them absolutely irresistible. Store leftovers in an airtight container on the counter for up to a week… If they last that long

Ingredients:
1 cup instant oats

¾ cup whole wheat flour (or GF*)

1 ½ tsp baking powder

1 ½ tsp ground cinnamon

⅛ tsp salt

2 tbsp coconut oil or unsalted butter, melted and cooled slightly

1 large egg

1 tsp vanilla extract

½ cup pure maple syrup

¾ cup peeled & grated carrots ~1 small - medium

Directions:

1. In medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the maple syrup until thoroughly incorporated. Add in the flour mixture, stirring just until incorporated. Fold in the carrots. Chill dough 30 minutes. (If chilling longer, cover with plastic wrap, ensuring it touches the entire surface of cookie dough.)

2. Preheat oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.

3. Drop cookie dough into 14 rounded scoops on the baking sheet. Flatten slightly using a spatula. (They don't spread much) Bake at 325°F for 12-15 minutes. Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.

Truffle-Like No Bake Brownies 🍫

Ingredients

12 large pitted medjool dates

½ cup clean nut butter (means no added sugar or oil)

¼ cup unsweetened cocoa powder

¼ tsp. sea salt (or Himalayan salt)

¼ cup dark chocolate chips (but no one is the boss of you :) - you measure that with your heart)

¼ tsp. extra-virgin olive oil

¾ tsp. flakey salt

Instructions

1. Add dates, almond butter, cocoa powder, and sea salt to a food processor; cover. Process until smooth.

2. Line an 8 x 5-in. loaf pan with parchment (leave a little hanging over the sides to lift the brownies out); press date mixture evenly into pan. Freeze for 30 minutes.

3. While the mixture is freezing, add chocolate chips and oil to a heatproof bowl; set over a pan of simmering water. Stir occasionally, until chocolate is fully melted; set aside.

4. Remove pan from freezer; top with melted chocolate. Sprinkle with flakey salt.

5. Let chocolate set for 1 minute; lift brownies out of pan. Cut into 12 equal pieces.

Turmeric Latte

The weather continues to get cooler (depending where you are!) and I’m loving this warm Turmeric Latte on cool mornings 😍 This recipe makes 2 servings, so whip one up for you and a loved one!

Ingredients

  • 2 cups unsweetened vanilla almond milk

  • ½ tsp pure vanilla extract

  • 4 tsp honey

  • 1 tsp ground turmeric

  • ¼ tsp ground cinnamon

  • Pinch of ground nutmeg

  • Pinch of cardamom

  • Extra ground cinnamon to sprinkle on top!

Instructions

  1. In a small pot, add almond milk, vanilla, honey, ground turmeric, cinnamon, nutmeg, and cardamom over medium-high heat.

  2. Whisk together and bring ingredients to a boil; then, reduce heat to low and simmer for 3-5 minutes to reduce the mixture, stirring occasionally.

  3. Pour into 2 small mugs, then sprinkle with ground cinnamon.

While you might not be going on a tropical vacation anytime soon… this coconut + pineapple combo will help you imagine you’re sitting on a white sand beach with a fruity summer cocktail in your hand! ‘m picturing Tahiti in a hut over the water, how about you???

Ingredients
* 1 cup cubed pineapple
* ½ cup unsweetened pineapple juice
* ½ cup canned light coconut milk
* ¼ cup unsweetened shredded coconut
* 2 tbsp chopped fresh cilantro or basil

Instructions
1) Place pineapple, pineapple juice, coconut milk, coconut, and cilantro in a blender; cover and blend until smooth.
2) Pour mixture evenly into ice pop molds; freeze for at least 4 hours, or until set.

This is one of the easiest, tastiest muffins and it’s so dense, you will be full! I love this as a side to breakfast with Ultimate Portion Fix or 2B Mindset!! it’s also a great snack during the day!

Ingredients:
2 ripe bananas, the riper, the sweeter
2 extra-large eggs (large will do, but I like the extra protein)
2 c old-fashioned oats
1 c plain greek yogurt (look at protein and sugar on the side, you want high protein, low sugar)
½ c maple syrup or honey (if you use vanilla yogurt, or extra ripe bananas then cut this to ⅓ c)
1 ½ tsp baking powder
¼ c chai seeds (you do not need to soak these, just dump them in)
** top with nuts, seeds, oats, chocolate chips, or nothing, they’re pretty as is. I chose chocolate chips as my topping, but once I made these, the batter was plenty sweet so I never added them. If you know me, you’re probably questioning my mental health or thinking someone took over my blog. It’s true, I passed on chocolate. Don’t expect me to do it again :)
** I wish I added Vanilla Whey Shakeology, I will in the next batch. It’ll help sweeten it if you’re cutting the sugar (which I always encourage)

Directions:
1) In no particular order, dump everything in the blender! Don’t you love that, easy as can be! Get your kids involved, this is that simple.

4) Cook at 175 celsius for 20 minutes. Stay near by so you can keep an eye on them and enjoy all the smells!
**Bananas can be replaced with sweet potatoes or pumpkin. Both would be delicious year-around, but especially in the fall.

5-ingredient Chocolate Peanut Butter Cups

This is ALL you need guys, couldn’t be simpler, yet still indulgent. I am giddy with excitement for my boys to come home and try these because I knowwwwww, they will loveeeee them! But then I have this other feeling of “where can I hide these bad boyzzzz?” Do you get me? It makes 12 so that’s 12 days of hiding ;o) I’ll cut to the chase…

Ingredients:
⅓ cup clean smooth peanut butter (I prefer dark roasted, but any nut butter will do)
1 ½ tsp honey (I always prefer creamed honey, but it made it thicker, so I wouldn’t for your 1st attempt. Yeah, I already know you’ll make this more than once!)
1 TBSP vanilla (you can do as little as 1 tsp, but I like vanilla flavoring)
1 TBSP unflavored, or vanilla flavored, Collagen Peptides (I prefer this brand for joint support as well, it is nothing except Bovine Peptides. **watch for unnecessary additives)
1 cup dark chocolate chips (or 70% Cocoa baking chocolate ~ 255 grams)

Directions:
1) Mix all ingredients together in bowl, except for the chocolate. Once creamy, put aside in fridge.
2) Put paper liners in a 12-slotted muffin tin. Set aside.
3) Melt chocolate in a microwave-safe container (at 70-80% power) in 30 second intervals. Stir in between so you don’t overheat it or burn the chocolate. You can also do this on the stove.
4) Dollop 1 tsp melted chocolate in each muffin liner and spread from edge to edge with back of spoon or spatula.
5) Follow with 1 tsp peanut butter mixture from fridge in each muffin liner. If you have leftovers, just even it out amongst the 12. Smooth layer.
6) Use remaining chocolate for top layer, 1 tsp in each, and smooth layer. Should be looking like a Reese’s Cup at this point ;o)
7) Put in the fridge for 2 hours and then remove and store in ziplock or Tupperware for up to 2 weeks. Or, share it and watch how fast it disappears.

Macros: 170 calories, 4g protein, 9g carbs, 13g fat, 7g sugar, 3g fiber

So, I did a thing!! I got Certified as a Personal Trainer with NASM (National Academy of Sports Medicine) and am starting my own business focusing on nutrition (also got certified with NASM as a Nutrition Coach) and fitness. Blueberry Greek Yogurt Protein bites

It sounds way healthier calling these “protein bites” (which they are), but they could double as dessert and no one would know they were good for them. Tell me if I’m wrong, but these look like blueberries covered in white chocolate. AMIRIGHT??? LOL My inspiration came from a Weight Watchers recipe, but in true WW fashion, it had unnecessary sugar. I’m a WW dropout, so I can say “been there, done that”. Wasn’t a lifestyle I could keep up with and model in front of my kids as “health"y”. Far from it actually. WW recipes might be low calorie, but they’re a shit storm of low fat, reduced fat, light, ingredients which basically means, CHEMICAL SHIT STORM. No thanks. Foodies here that wants to take control of what goes in my body!

Ingredients:
1 cup PLAIN greek yogurt
1 TBSP honey (although I think you can omit this if using Shakeology - it’s sweet enough for me)
1 scoop vegan vanilla Shakeology (any protein powder will do, but be careful because many taste chalky so you’ll want more sugar to mask the taste…or just get Shakeology and thank me later) ***
1 c washed blueberries

Directions:
Stir all ingredients together and then add blueberries. Divide into TBSP servings and freeze. Take out when ready to eat. YUMMMM! Share your comments below; can’t wait to hear how you like these!

When I hear all those “free” words I think, “hummmm, what’s left? can these be good?” Well, let me be the one to tell you, YES. THEY. CAN. They are FODMAP approved cookies and my kids devoured them in no time flat. Don’t believe me? I made 14, and before I could get the picture of them straight from the oven, this is what happened… LOL 8 left!

3 ingredients and super easy so read this and then let your kids make them! Maybe they’ll even clean up, but that might be pushing your luck :)

1 cup almond flour
1/2 cup maple syrup (not Aunt Jemimas, get the real stuff!)
1 lemon zested
1 lemon juiced, seeds removed

Add all ingredients to a bwl and stir. Put in ziplock bag and freeze for one hour. I froze mine overnight so weather bland looking, but they tasted just as good. Use a fork to make texture marks if you want, adds flair :) Cook at 160 celsius / 350 farenheit for 8-9 minuets. Let them cool before removing from silicon sheet.

Makes 14 cookies, 116 calories each, 8g fat, 7.5 g carbs, 3.7g protein. Ultimate Portion Fix containers = 1 tsp, .5y

You guys, I am LOVING this program!!! Although I'm very conscious about my health and fitness, I still have cellulite I’d LOVE to lose. Well, I'm down 3.5 pounds already and we just launched!  That's a lot for me!  AND I feel AWESOME!  I haven't had this much energy in a long time!

One of the things I absolutely love about this program is that no treat is off-limits.  She calls treats "silly carbs" and they are all ok!  She teaches us to eat Fiber-Filled Carbohydrates at most meals, but if you want some silly carbs, then go for it - following her guidelines/process.  I LOVE THAT. I also love quantity and that is celebrated on this program - YES PLEASE!

It hurts. MY BOO-TAY HURTS! Confession...my whole life, I could sit on concrete or wood and be totally comfortable where all my friends were like "this is so uncomfortable", "why do we have to sit on something so hard" etc. 😮 and I'm like...Girl, I brought my own cushion in the back. I don't even feel the ground 😂🤔🤣

But thanks (I *think*) to 80 day Obsession, my booty is shrinking and I'm finding myself complaining now that the ground feels hard. 🤗 My lulu shirt is too big and I used to have rolls over it. I haven't stepped on the scale since my 3 day refresh last month because I'm not focused on scale goals, I'm working on toning, building strength and endurance (non-scale victories).

I have 2 boys that I need to keep up with and beat in soccer ⚽. Soon they'll run circles around me. Autumn is working me hard so that doesn't happen! Who else wants to see some booty gains, fat loss, lean muscle and learn how to eat! I thought I knew already when I was living by my Fitbit and Garmin steps counters and my, My Fitness Pal calorie tracker and I just can't even.

The easiest way to make an ice cream cake!

I've never made an ice cake before, but my son really really wanted a Baskin Robbins Ice Cream cake and I didn't feel like paying $69.95 for it, so I decided to make it.  All in, the ice cream cost me $16 and the cake mix $4, candles $3, and icing ingredients (because my hubby CANNOT buy store bought ice cream - whatevs) $5.  So $28, vs $70 and my son was so proud because we "made it".  We will take that win to the bank any day :)  

For the record, I believe some things are better from a box.  This isn't clean eating so buying a cake mix causes me no guilt or uncomfortable feelings, I secretly do a jump in the grocery aisle thinking (1) it will turn out and (2) I'm glad I'm not THAT MOM that has to make homemade cakes from scratch because see #1 above.  It won't turn out, I. Just. Know. It.  I digress.  

Here's what I did and the beauty of this is you can do it days ahead, it actually turns out better so no stressing the day of the party (as long as you have a freezer handy. if not, stress away and think of Plan B). 

Step 1: Chose your favorite ice cream and partially defrost it.  Line the pan you chose to use (I'd stick with brownie plan 8x8 or 9x9, or a round pan like this, similar size).  Line with parchment paper or seran wrap so you can easily pull it out without cracking or breaking the layer.  I had 2 pans so I made both ice cream layers at the same time.  As you're spooning the ice cream into the pan and pressing it down, it will smooth out and fill in all the holes. If it still seems lumpy, maybe you have too much and need to eat some.  I kid.  Not.  When finished, put in the freezer and let re-freeze for a day

Step 2: Make your cake.  I wanted to do 2 layers ice cream and 2 layers cake, but that would have just been too much cake and we'd have it leftover for months, so I stuck with 3 layers total.  the top looks thicker because of the vanilla frosting.  Once you make your cake as instructed, let it cool completely and put it in the freezer.  I lined the pan with aluminum foil so I could take it out easily and it could go in the oven.  Parchment paper would work too, but I find it crinkles in the oven sometimes and I wanted my cake smooth. Once completely cook, put in freezer for a few hours, or up to one day.

Step 3: Remove all layers from their respective pans and stack together.  You need to use freezer-friendly icing which is really hard to find in here, so we made whipped cream frosting and it was perfect!  Ice it VERY QUICKLY, remember you're dealing with ice cream here and it's no longer in the mold and will lose shape and form fast!!  Put in freezer once you're done and let it all come together.  The icing can fill in any defects so no pressure to have each layer perfect. You could ice between the layers, but for my first cake, I didn't want to risk timing and the ice cream melt on me.  That experiment is for cake #2 :) 

Step 4: Add any toppings and store in freezer till ready to serve.  At this point, I'd put it on your fancy cake platter and be ready to serve it.  We have 3 of these and have moved them from CA, to TX, to Australia and used them NEVER!  NOT ONE SINGLE TIME. We forget and this happens and we are screwed!  Thus, remember to transfer before the party starts. You're welcome :) 

This served 8 boys and we 12 pieces still leftover!  It makes a lot!!! To store leftovers, slice it completely and put in freezer-safe tupperware and you could enjoy for weeks to come. My family will eat this in 4 nights (3 people * 4 nts = 12 pcs) GONE!

2 Ingredient Ice Cream

Ice cream can be a treat, and be delicious and be on the plan.  It is possible and add to that list, it can trick your kids.  By that I mean...this ice cream which is bananas and peanut butter is a favorite in my household.  And my household consists of two boys that HATE bananas, but they will eat this in 30 seconds flat and take down a Shakeology with banana blended in it like NOBODY'S BUSINESS.  Try it.  And feel free to laugh at overheating my blender.  Since I made this video, I slice my bananas up before freezing them so this hasn't happened again. But, my Au Pair and I got a great laugh from the video :) 

Dirt & Worm Bars

You guys...MAKE THESE!!!  This is all the things we don't encourage on 21 Day Fix, but they are all the things kids want...oreos and marshmellows and gummy worms.  What's not to love?!?!  And the best part is that these ingredients don't tempt me AT ALL so I can make these and own that I have no willpower and still not get derailed!  YES!!!  

The ingredients are in the picture below.  These literally take 5 minutes to make, from start to finish.  Dump all your Oreos in a gallon ziplock bag and SEAL!  Do not forget this step or you will hate me when you have Oreos all over your kitchen!  Hand the bag off to your kids and put them to work ;)  We use a meat pounder and play hot potato, but you can do whatever.  Then melt the butter and marshmellows in the microwave for 30 second intervals so they don't burn over blow up.  Another direction to follow because believe me, that is messy as heck to clean up! 

Combine your melted butter, marshmellows and Oreos together and pour into a greased 8x8 pan and put in the fridge.  Once they're cooled and you can easily cut, slice into 16-24 depending on portion sizes you want and put a gummy worm on top!  ENJOY!!!  

PS - these are not just for kids.  Grown ups love them and I've found dad's devour them!

You are welcome for saving you $5.75 a cone!  Isn't that crazy?  While you're paying for it, YES, but while you're eating it, you're like...oh sweet friend, you are so worth it all!  Ok, maybe that's just me.  Sorry not sorry.  My favorites...A Cookie Affair, Brownie Batter, Chocolate Chip Cookie Dough, Chocolate Fudge Brownie (I've eaten an entire pint by myself WHILE DOING TAXES before.  Don't eat ice cream and do taxes, JUST. DON'T), The Tonight Dough, Strawberry Cheesecake (and I don't like fruity ice cream - this is the ONLY strawberry cheesecake ice cream  I will eat).  Who ever hear of a picky ice cream eater?  ME!!! RIGHT HERE! If I'm going to eat the calories, I want them to be yummy and worth it.  Like VG's, Leucadia or Krispy Kreme donuts.  I WILL NOT eat any others.  You won't even tempt me, but those...I might eat till I'm sick. True story. #notproud

But, heres the kicker with all of those scrumptious flavors...they have dairy!!!  I know you're thinking...DUH!  Well, I know these things and when I have no willpower, I eat them anyways and then I, and those around me (who are usually the ones I love most) pay the price.  

But guess what this wonderful company did...the designed 4 flavors that are made with Almond Milk.  YESSSSSS!  And I tasted one yesterday, the Peanut Butter & Cookies and it's legit good y'all.  You wouldn't even know except that after I eat it, everyone is happy and stays happy.  No tummy ache at all and no bloat so right back to the beach in my bikini and didn't miss a beat.  

You need to try these on April 10th!  Yes, I teach clean eating, yes I believe it's important, yes I also believe that you can't deprive yourself of things or then you binge. I'm not saying go all week.  Go on the 10th, save some money, treat yourself and on the 11th resume daily self control.  We can't have it all the time ;)

Oatmeal Peanut Butter Easter Eggs

I'm not trying to be a debbie downer, but at Easter, I feel like sugar becomes the focus very easily!  There are mollies, chocolate and Peeps everywhere.  How gross are those marshmallow things?!?! I try to limit their sugar and focus on the reason for the season.  Yes, we do egg hunts, and sometimes 3-4 in a weekend, but I fill them with tattoos, erasers, and various non-sugary items that make the kids equally happy!  I promise! My kids are not deprived and there's no mis-behaving or sugar crashes an hour later so we all win!  These are a fun way to indulge a little without eating a sugar stick and festive too.  I switched some of the ingredients to keep it clean. 

Ingredients:
2 ½ C quick oats
3 TBSP peanut butter (keep it clean, should be just nuts and maybe salt)
¼ C maple syrup
1 tsp. vanilla
5 TBSP unsweetened almond milk
¼ C mini chocolate chips, opt (I prefer Dark Chocolate)
Sprinkles for decoration
Plastic eggs, wash first

Directions: 
In a medium bowl mix dry ingredients and set aside. In a large bowl add maple syrup, vanilla, milk and peanut butter. Stir until mixture has been combined, add the dry ingredient to the large bowl and mix with hands.  Once combined, add chocolate chips. Place in plastic eggs and let set in the fridge for 1 hour. Pumpkin Cookies

These taste like warm oatmeal cookies with a creamy pumpkin filling you'd find in a donut. Yes I said the word donut on my blog ;)  The fat content is minimal because we use organic extra-virgin coconut oil, plus they’re gluten-free!  It's always a win if you can stay on target with your goals and please the whole family, while indulging. You don't have to disown sweets to tone and lose weight and these are in line with 21-Day Fix container system.  

SERVES: 9 (1 pie each)

INGREDIENTS - COOKIES:

I served these with creamy peanut butter on top and they were delicious too. I stored in the fridge and we used them in school lunches, breakfast with yogurt, dessert with cream filling or like this (above). You can't go wrong.

  • 1 cup dry old-fashioned rolled oats

  • ½ cup gluten-free all-purpose flour

  • ½ tsp. ground cinnamon

  • ¼ tsp. baking powder

  • ¼ tsp. sea salt (I prefer Himalayan salt)

  • ¼ cup extra-virgin organic coconut oil

  • ¼ cup coconut sugar

  • 1 large egg

  • ½ tsp. pure vanilla extract

  • ½ cup chopped raw walnuts (opt)

INGREIDENTS - PUMPKIN FILLING:

  • ¼ cup heavy whipping cream

  • ½ tsp. unflavored gelatin (preferably from grass-fed cows)

  • ½ cup 100% pure pumpkin puree (this is hard to find in Australia)

  • 2 Tbsp. coconut sugar

  • 1 pinch sea salt (I prefer Himalayan salt)

  • ¼ tsp. ground cinnamon

  • ¼ tsp. ground ginger

  • ¼ tsp. ground nutmeg

  • 1 dash ground cloves

  • ½ tsp. pure vanilla extract

DIRECTIONS - COOKIES:

  1. Preheat oven to 350º F or 160º C

  2. Line baking sheet with parchment paper and lightly coat with spray (I prefer Olive Oil spray).

  3. Combine oats, flour, cinnamon, baking powder, and salt in a large bowl; mix well. Set aside.

  4. Combine oil and sugar in a medium bowl. Using electric mixer beat until light and fluffy.

  5. Add egg and extract; beat until well blended.

  6. Gently fold in oat mixture and mix until just blended.

  7. Fold in walnuts (if desired) and mix until just blended.

  8. Spread 18 rounded Tbsp. of dough onto lined baking sheet.

  9. Bake 6 to 8 minutes, rotating baking sheet once halfway through, or until golden brown.

  10. Cool cookies completely before filling (hot cookies will melt the cream filling).

DIRECTIONS - PUMPKIN FILLING:

  1. While cookies are baking, combine cream and gelatin in a large mixing bowl; whisk to blend. Let stand for 5 minutes.

  2. Add pumpkin, sugar, salt, cinnamon, ginger, nutmeg, cloves, and extract to cream mixture; whisk to blend.

  3. Add pumpkin mixture to a large skillet. Bring to a gentle boil, over medium heat, stirring constantly. Reduce heat to medium-low; cook, stirring constantly, for 3 to 5 minutes, or until mixture has thickened slightly.

  4. Place pumpkin mixture in heat-proof bowl, then place bowl in ice bath. Chill for 5 to 10 minutes, or until pumpkin mixture has set to the consistency of pudding.

  5. Transfer pumpkin filling to a large resealable plastic bag. Refrigerate until it’s time to fill the pies.

DIRECTIONS - WHOOPIE PIES:

  1. Snip off one corner of plastic bag (containing pumpkin filling) with a pair of scissors.

  2. Pipe approx. 1 Tbsp. filling on the flat bottom of a cookie; press another cookie on top to form a sandwich. Continue with remaining cookies and filling until nine pies are complete.

  3. Whoopie pies may be enjoyed immediately or refrigerated in an air-tight container for up to 4 days.

Did you know the recommended daily intake for women is only 24 g and for men it's 36 g. YIKES?!?! You'd be amazed how quickly you can reach these levels without even picking up a dessert, candy, or soda! Yogurt, granola and celeral is the biggest culprit in our house.

👎 It's everywhere! Check labels on pasta sauce, breads, drinks, yogurts, etc.
